Tartar of Holzen Angus, mountain potato, Dallenwiler Geissä Chugla

White asparagus, morels, wild garlic

Pike-perch fillet, Swiss shrimp, sorrel

«Capuns» with pieces of Schwarzä Oupäsui, fermented cabbage broth

Veal sweetbreads, green asparagus, tarragon sauce
